  • 2 medium zucchinis
  • 1 can (400g) chickpeas
  • 1 red bell pepper
  • 1 small red onion
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Cup crumbled feta cheese
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine sliced zucchinis, drained chickpeas, bell pepper, onion, olive oil, oregano, smoked paprika, salt, and pepper. Toss until well coated.
  3. Spread the mixture evenly on the prepared baking sheet and roast for 25-30 minutes, stirring halfway through.
  4. Remove from oven and sprinkle crumbled feta over the top. Return to the oven for an additional 5 minutes until slightly melted.
  5. Garnish with chopped parsley before serving warm.
