  • 810 medium shrimp, peeled & deveined
  • 1 cup cooked brown rice
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup diced pineapple
  • 1 cup diced tomato
  • Juice of lime
  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & black pepper to taste

Instructions

  1. In a skillet, heat olive oil and season the shrimp with smoked paprika, garlic powder, salt, and pepper. Sear for 2-3 minutes per side until pink and slightly charred.
  2. In a mixing bowl, combine corn, pineapple, diced tomato, lime juice, and salt. Toss well to mix.
  3. To assemble the bowl, place cooked brown rice at the base. Top with seared shrimp and spoon over pineapple corn salsa. Garnish with cilantro if desired.
