  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 cup unsalted butter (softened)
  • 1 1/2 cups powdered sugar
  • 1/4 cup cocoa powder
  • 1 tablespoon milk or cream
  • Fresh cranberries (for decoration)
  • Edible mushrooms or meringue mushroom kit
  • Edible glitter or snow
  • Fresh sprigs of rosemary or evergreen

Instructions

  1. Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. Beat egg whites until soft peaks form, gradually adding half the sugar until stiff peaks form.
  3. In another bowl, beat egg yolks with remaining sugar until pale, then stir in vanilla.
  4. Sift flour, cocoa powder, baking powder, and salt; fold into yolk mixture.
  5. Gently fold in egg whites until combined.
  6. Spread batter evenly into the pan and bake for 10–12 minutes.
  7. Roll warm cake in a towel dusted with powdered sugar; cool completely.
  8. Whip heavy cream with powdered sugar and vanilla until stiff peaks form; spread over cooled cake.
  9. Roll tightly and refrigerate for at least an hour before frosting.
  10. Prepare chocolate buttercream by beating softened butter with powdered sugar, cocoa powder, milk, and vanilla until smooth.
  11. Frost the chilled log and decorate as desired.
