  • 2 large raw beetroots
  • 5 cups mixed green salad
  • 1 avocado
  • 2 medium cucumbers
  • 1 red onion
  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp red apple vinegar
  • Sea salt and freshly ground pepper to taste
  • â…“ cup walnuts
  • ½ cup feta cheese
  • 3 Tbsp pomegranate seeds
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Wash beetroots, wrap in foil, and roast on a baking sheet for about 45 minutes until tender. Let cool before peeling and slicing.
  2. While beets roast, wash mixed greens, peel and cube avocado, slice cucumbers into half-moons, and thinly slice red onion.
  3. Toast walnuts in a dry skillet over medium heat for about 5 minutes until fragrant; let cool slightly before crumbling.
  4. In a large mixing bowl, combine mixed greens, sliced beets, cucumber halves, avocado cubes, red onion slices, crumbled feta cheese, pomegranate seeds, and crumbled walnuts.
  5. Whisk together olive oil, red apple vinegar, sea salt, and pepper in a small bowl; drizzle over the salad mixture just before serving and toss gently.
