  • 1 1/2 cups all-purpose plain flour (spoon and leveled)
  • 3/4 cup granulated sugar
  • 2 1/4 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup dairy-free yogurt (or unsweetened applesauce, room temperature)
  • 1/3 cup dairy-free milk (room temperature)
  • 1/3 cup neutral flavored oil
  • 1 tablespoon apple cider vinegar (or lemon juice, optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Prepare the strawberry filling by combining chopped strawberries with sugar and lemon juice; add flour and mix gently.
  3. For the crumb topping, combine flour, sugar, melted vegan butter, and cinnamon until crumbly.
  4. In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix dairy-free yogurt, milk, oil, vinegar (if using), and vanilla extract.
  5. Combine wet and dry ingredients until just mixed. Pour half of the batter into the pan; layer half of the strawberry mixture on top. Add remaining batter followed by the rest of the strawberries; sprinkle crumb topping over everything.
  6. Bake for about 65 minutes or until golden brown and a toothpick comes out clean.
