  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 cups fresh pineapple chunks (or frozen, thawed)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons cornstarch (for coating the tofu)
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking
  • Green onions and sesame seeds for garnish

Instructions

  1. Press the tofu between clean kitchen towels for 15 minutes to remove excess moisture.
  2. Cut pressed tofu into 1-inch cubes and toss in cornstarch until well-coated.
  3. Heat oil in a non-stick skillet over medium-high heat, then add tofu in a single layer and cook until golden brown on both sides (about 6-8 minutes total). Remove and set aside.
  4. In the same skillet, sauté sliced peppers and onion for about 5 minutes until caramelized.
  5. Add minced garlic and ginger; cook until fragrant (about 30 seconds).
  6. Stir in pineapple chunks and let caramelize for an additional 2-3 minutes.
  7. Combine soy sauce, rice vinegar, and maple syrup in a bowl, pour over the mixture in the skillet, add crispy tofu back in, and stir gently for 2 minutes until well-coated.
