  • 34 tbsp smooth peanut butter
  • 34 tbsp agave syrup (or maple syrup)
  • 1 tsp vanilla extract
  • 100 grams dark chocolate (70% cocoa)
  • 400 grams full-fat coconut milk

  1. In a blender, combine silken tofu, peanut butter, agave syrup, vanilla extract, and a pinch of salt. Blend until smooth.
  2. Spoon the mousse into ramekins or jars and chill them while preparing the ganache.
  3. Melt dark chocolate using a microwave or double boiler until fully melted. Mix in the creamy part of the coconut milk until well combined.
  4. Pour the ganache over each portion of mousse and let it set in the fridge for about 1 hour before serving.
