  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1/3 cup natural cocoa powder
  • 1/4 cup dry hot cocoa mix
  • 10 large vegan marshmallows (cut in half)
  • 8 ounces semi-sweet chocolate (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Add the egg and vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, hot cocoa mix, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  5. Chill the dough in the refrigerator for at least 30 minutes.
  6. Scoop heaping tablespoons of dough onto prepared baking sheets, spacing them apart.
  7. Bake for about 8 minutes; then press a half marshmallow onto each cookie and return to bake for an additional 2 minutes.
  8. Allow cookies to cool on a wire rack before topping with melted chocolate.
