  • 2 stalks celery, diced
  • 4 ounces mushrooms, sliced
  • 15-ounce can cannellini beans (rinsed)
  • 2.5 cups vegetable broth

  1. In a mixing bowl, combine flour, baking powder, salt, and pepper. Mix in vegan butter until crumbly. Gradually stir in soy milk until just combined; set aside.
  2. In a large pot over medium heat, heat olive oil and sauté onion until translucent. Add garlic and cook until fragrant.
  3. Stir in carrots, celery, and mushrooms; cook for about 5 minutes.
  4. Add tomato paste, cannellini beans, vegetable broth, parsley, thyme, salt, and pepper. Bring to a gentle boil; reduce to simmer.
  5. Drop spoonfuls of dumpling batter onto the simmering stew. Cover tightly and steam for about 15-20 minutes until fluffy.
