  • 16 oz rotini pasta
  • ½ cup roasted red peppers (diced)
  • ½ yellow onion (diced)
  • 2 oz can black olives (sliced)
  • ½ large cucumber (peeled and diced)
  • 12 slices chopped chicken
  • 10 chopped cheddar cheese sticks
  • 1 cup sliced turkey sausage sticks
  • ½¾ cup Italian dressing
  • Grated Parmesan cheese for topping

Instructions

  1. Boil water in a large pot. Add rotini pasta and cook until al dente according to package directions. Drain and let cool.
  2. Dice roasted red peppers, onion, cucumber, and chop chicken, cheese sticks, and turkey sausage sticks. Combine all in a mixing bowl.
  3. Add cooled pasta to the mixing bowl. Pour in Italian dressing and toss until well-coated.
  4. Adjust seasoning as desired by adding more dressing.
  5. Serve in a hollowed-out pie pumpkin or a serving dish. Top with grated Parmesan before serving. Chill until ready to serve.
