Ingredients

  • 1/2 cup salted butter
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg white
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 20 caramels (unwrapped)
  • 1 tbsp milk
  • 2 cups milk chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the salted butter and sugar until light and fluffy.
  3. Add egg white and vanilla extract; mix well.
  4. Combine flour and baking powder; mix until dough forms.
  5. Roll out the dough to about 1/4 inch thick, cut into circles, and place on an ungreased baking sheet.
  6. Bake for 6-8 minutes until puffy but no longer glossy; let cool on a wire rack.
  7. Microwave caramels and milk until smooth; spoon onto cooled cookies.
  8. Chill cookies until caramel sets.
  9. Melt chocolate chips in intervals until smooth; spread over caramel-topped cookies.
