  • 4 slices turkey bacon
  • ½ cup sour cream
  • ⅓ cup whole milk
  • 4 tablespoons butter
  • ¾ cup cheddar cheese
  • 3 tablespoons chopped chives
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and dry the russet potatoes, pricking them with a fork. Bake on a parchment-lined baking sheet for 50-60 minutes or until tender.
  2. Cook turkey bacon in a skillet over medium heat until crispy, then crumble it into small pieces.
  3. After baking, cool potatoes slightly before slicing them in half lengthwise and scooping out most of the flesh into a bowl.
  4. Mix the potato flesh with sour cream, whole milk, butter, crumbled turkey bacon, cheddar cheese, chives, salt, and pepper until smooth.
  5. Fill each potato skin with the mixture and top with remaining cheese. Return to the oven and bake for another 15-20 minutes until golden.
