  • 4 bone-in chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup dried apricots, chopped
  • 1/4 cup raisins
  • 2 cups chicken broth
  • 1/4 cup toasted almonds (for garnish)
  • 1/4 cup fresh cilantro (for garnish)

Instructions

  1. Heat olive oil in a tagine or heavy pot over medium heat. Brown the chicken thighs on both sides for about 5-7 minutes until golden; remove and set aside.
  2. In the same pot, sauté onions until soft (about 3-4 minutes), then add minced garlic and cook for an additional minute.
  3. Stir in spices: cumin, coriander, cinnamon, ginger, paprika, salt, and black pepper. Cook for about 1 minute to release their aroma.
  4. Return the browned chicken to the pot along with chopped apricots and raisins; pour in chicken broth. Cover and simmer on low heat for 45 minutes until chicken is tender.
  5. Stir in toasted almonds before serving hot with couscous or bread. Garnish with freshly chopped cilantro.
