  • 2 tbsp butter
  • ½ cup sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp salt
  • juice of ½ lemon
  • 2 ½ cups flour
  • 1 tsp salt
  • 1 cup cold butter (diced)
  • ½ cup ice water
  • ¼ cup butter (for toffee sauce)
  • ½ cup brown sugar
  • ¼ cup heavy cream
  • 4 tbsp cornstarch
  • 1 egg
  • 1 tbsp water
  • 2 cups milk
  • 3 egg yolks
  • ⅓ cup sugar
  • 1 tbsp cornstarch
  • pinch salt
  • 2 tsp vanilla extract
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel, core, and slice the apples. Toss them with lemon juice, sugar, cinnamon, and spices.
  3. Prepare the crust by mixing flour and salt; cut in cold butter until crumbly and add ice water until combined.
  4. Roll out half the dough into your pie dish, fill it with the apple mixture, and dot with butter.
  5. For the toffee sauce, melt butter in a saucepan, stir in brown sugar and cream until smooth; add cornstarch to thicken.
  6. Pour the toffee sauce over the apples and cover with remaining crust; cut slits for steam.
  7. Bake for about 20 minutes until golden brown.
