  • 35 chocolate creme cookies
  • 5 tbsp unsalted butter
  • 24 oz cream cheese (room temperature)
  • 8 oz mascarpone cheese (room temperature)
  • 1 ½ cups granulated sugar
  • 4 large eggs (room temperature)
  • 12 ladyfinger biscuits
  • ½ cup strong black coffee
  • ½ cup heavy cream
  • 1 cup sour cream
  • 1 tbsp cornstarch, sifted
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 2–4 tbsp granulated sugar (for topping)
  • 1 tsp instant coffee dissolved in 1 tsp water
  • 1 cup heavy whipping cream, chilled
  • 2 tbsp cocoa powder, to dust

Instructions

  1. Preheat your oven to 350°F and prepare a springform pan by buttering the base.
  2. Crush chocolate cookies in a food processor and mix with melted butter. Press into the bottom of the pan, then bake for 7–8 minutes.
  3. Lower oven temperature to 320°F. In a stand mixer, blend cream cheese, mascarpone, sugar, vanilla essence, and salt until smooth.
  4. Gradually add eggs while mixing on low speed. Incorporate heavy cream, sour cream, and cornstarch until combined.
  5. Dip ladyfingers quickly in coffee and layer them over the crust. Pour filling over layers and smoothen it out.
  6. Bake using a water bath method for even cooking until set.
  7. Let cool gradually before refrigerating for at least four hours or overnight.
