  • 1/3 cup parmesan cheese, shredded (rennet-free if needed)
  • 1 tsp italian herb blend
  • 1 tsp balsamic vinegar
  • 1/3 cup chopped fresh basil

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine cauliflower, carrots, bell pepper, and red onion. Drizzle with olive oil and season with salt and black pepper; toss to coat.
  3. Spread the vegetables on a baking sheet in an even layer and roast for about 20 minutes until golden brown and tender.
  4. In a saucepan over medium heat, sauté garlic with crushed red pepper flakes in olive oil until fragrant. Add sun-dried tomatoes, coconut cream, vegetable broth, and seasonings; simmer for about 5 minutes.
