  • 1 cup uncooked white rice
  • 2 cups water or chicken broth
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans (15 oz, drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro (optional)
  • Lime wedges (optional)

Instructions

  1. In a large pot, bring 2 cups of water or chicken broth to a boil. Add 1 cup of uncooked white rice, reduce heat to low, cover, and simmer for about 18-20 minutes until tender.
  2. While the rice cooks, heat 2 tablespoons of olive oil in a skillet over medium heat. Add 1 lb ground beef or turkey and cook until browned. Stir in 1 packet taco seasoning, 1 can black beans, and 1 cup corn; cook until heated through.
  3. In serving bowls, layer cooked rice at the base followed by the meat mixture. Top with 1 cup diced tomatoes, 1 cup shredded lettuce, 1 cup shredded cheddar cheese, and ½ cup salsa.
