Ingredients

  • 2 large sweet potatoes (about 1.5 lbs), peeled and thinly sliced
  • 4 cups kale, stems removed and chopped
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup Gruyère cheese, grated
  • 1/4 teaspoon ground nutmeg
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil (for greasing the baking dish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice the sweet potatoes using a sharp knife.
  3. In a skillet over medium heat, sauté the chopped kale with a splash of olive oil or water until wilted (about 5-7 minutes).
  4. Grease a 9×13-inch baking dish with olive oil.
  5. Layer the sweet potato slices in the dish followed by sautéed kale. Pour cream over each layer and sprinkle with grated cheese. Repeat layers until all ingredients are used.
  6. Cover with aluminum foil and bake for 30 minutes.
  7. Remove foil and bake for an additional 20-25 minutes until golden brown and tender.
  8. Allow to cool for about 10 minutes before serving.
