  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup low sodium soy sauce
  • 1/3 cup sugar
  • 2 tbsp pineapple juice
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup pineapple chunks
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1/2 medium onion, sliced (optional)

Instructions

  1. In a mixing bowl, combine cornstarch, salt, and black pepper. Coat the chicken pieces in this mixture.
  2. Heat vegetable oil in a non-stick skillet over medium-high heat and cook the chicken until golden brown on all sides (about 5–7 minutes). Remove from skillet.
  3. In the same skillet, mix ketchup, rice vinegar, soy sauce, sugar, and pineapple juice. Stir until the sugar dissolves.
  4. Gradually add cornstarch slurry to thicken the sauce.
  5. Return the chicken to the skillet along with pineapple chunks and bell peppers; stir well and cook for an additional 5–7 minutes until veggies are tender.
