  • 500 g boneless skinless chicken breast, diced into 2.5 cm cubes
  • 6 tablespoons cornstarch
  • 50 ml vegetable oil for frying
  • Salt and pepper to taste
  • 1 onion, thinly sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, grated
  • 432 g tin pineapple pieces, drained (reserve the juice)

Instructions

  1. Coat diced chicken breast with cornstarch, seasoning with salt and pepper.
  2. Heat vegetable oil in a wok over medium-high heat; fry chicken until golden brown (5-7 minutes). Set aside.
  3. Stir-fry sliced onion and bell peppers in the same wok for about 3-4 minutes.
  4. In a bowl, mix ketchup, cider vinegar, brown sugar, soy sauce, grated ginger, grated garlic, and reserved pineapple juice.
  5. Combine fried chicken with sautéed vegetables; pour sauce over everything and add drained pineapple pieces.
  6. Let simmer for another 5-7 minutes until heated through.
