  • 1 large onion
  • 2 cups celery
  • 1/3 cup fresh parsley (chopped)
  • 1/4 cup fresh sage (chopped)
  • 1 tablespoon fresh rosemary (chopped very fine)
  • 1 tablespoon fresh thyme leaves
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 cups high quality chicken/turkey broth (plus 1/2 cup more if necessary)
  • 2 large eggs
  • 1 tablespoon butter (softened)

Instructions

  1. Preheat the oven to 250°F. Tear or cut the bread into bite-sized pieces and spread on a dry pan to toast for about 1 hour.
  2. Chop the onion and celery; sauté them in melted butter over medium heat until softened (about 7-10 minutes).
  3. In a large bowl, combine toasted bread with sautéed vegetables and chopped fresh herbs.
  4. Whisk together chicken broth and eggs; gradually pour over the bread mixture while gently mixing until evenly moistened.
  5. Grease a baking pan with softened butter, transfer stuffing into it, and cover with foil.
  6. Bake at 350°F for 40 minutes covered; then remove foil and bake an additional 25-35 minutes until crispy.
