  • 4 medium bell peppers (any color)
  • 1 cup rice
  • 1 can (15 ounces) lentils
  • 1 can (15 ounces) diced tomatoes
  • 2 tablespoons extra virgin olive oil
  • 1 large onion (chopped)
  • 3 cloves garlic (grated)
  • 1½ teaspoons ground coriander (or ground cumin)
  • 1 teaspoon turmeric
  • ¼ teaspoon red pepper flakes (or more to taste)
  • 1 teaspoon salt
  • ⅛ teaspoon black pepper
  • 2 cups vegetable broth
  • ½ cup Italian parsley (chopped)
  • 4 wedges lemon

Instructions

  1. In a large skillet over medium heat, heat olive oil and sauté chopped onion until soft.
  2. Add rice, garlic, spices, and stir for 60 seconds.
  3. Mix in lentils, diced tomatoes, vegetable broth, salt, and pepper. Simmer for about 10 minutes until rice is half-cooked.
  4. Preheat the oven to 350°F (180°C). Halve bell peppers lengthwise, remove seeds, and lightly salt them.
  5. Fill each pepper half with the rice-lentil mixture and place in a baking dish.
  6. Bake for approximately 40 minutes or air fry for about 30 minutes until tender.
