  • 1 tsp salt
  • 1 cup sour cream
  • 1 cup fresh strawberries, chopped
  • 1 tbsp flour (to toss with strawberries)
  • 1 cup powdered sugar, sifted
  • 23 tbsp pureed strawberries (fresh or thawed frozen)
  • 1 tsp vanilla extract
  • A drop of pink food coloring (optional)

Instructions

  1. Preheat oven to 325°F (163°C). Grease and flour a 9×5 loaf pan or bundt pan.
  2. In a large bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  3. In another bowl, combine flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients, alternating with sour cream.
  4. Toss chopped strawberries in flour before gently folding them into the batter.
  5. Pour batter into the prepared pan and bake for 60-70 minutes or until a toothpick comes out clean.
  6. For the glaze, blend strawberries into a puree and mix with powdered sugar and vanilla until smooth. Adjust consistency as needed.
