  • 23 tablespoons fresh strawberry puree (strained to remove seeds if preferred)
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a bundt pan.
  2. In a bowl, whisk flour, baking soda, and salt.
  3. Cream together softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition along with vanilla extract.
  5. In another bowl, mix buttermilk and strawberry puree.
  6. Gradually combine dry ingredients with wet ingredients until just mixed.
  7. If desired, add pink food coloring and gently fold in.
  8. Pour batter into the prepared pan and bake for 70-80 minutes until a toothpick comes out clean.
  9. Cool in the pan before transferring to a wire rack.
