  • 1 cup homogenized milk
  • 1 teaspoon baking soda
  • 4 tablespoons butter
  • 1 cup dark brown sugar
  • 2 large eggs (room temperature)
  • 2 teaspoons pure vanilla extract
  • 1.5 cups unbleached all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • Sea salt flakes (for garnish)

Instructions

  1. Preheat your oven to 350°F and lightly butter an 11 x 8-inch casserole dish.
  2. In a bowl, mix chopped dates with baking soda and pour scalding milk over them; let cool for about 15 minutes.
  3. In another bowl, combine flour, baking powder, and salt. Beat eggs in a separate bowl until well mixed.
  4. In a food processor, blend eggs, dark brown sugar, butter, and vanilla until smooth. Gradually add dry ingredients while blending on low speed. Add soaked dates and their liquid; blend until smooth.
  5. Pour batter into the prepared dish and bake for about 30 minutes or until set and golden at the edges.
  6. While baking, prepare the caramel sauce by melting butter in a saucepan and mixing in brown sugar and salt until dissolved. Add cream and simmer until thickened.
  7. Once baked, poke holes in the pudding and pour one-third of the caramel sauce over it; let soak for about 15 minutes before serving.
