  • 3 eggs
  • ¾ cup buttermilk
  • 8 tbsp butter (for toffee sauce)
  • ¾ cup brown sugar (packed)
  • ¾ cup heavy cream
  • 1 tsp vanilla extract (for toffee sauce)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking dish with nonstick spray.
  2. In a large bowl, cream together granulated sugar, brown sugar, and butter until fluffy. Add eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas; mix well.
  3. In another bowl, combine flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add dry ingredients to wet mixture; stir until just combined.
  5. Pour batter into the baking dish and bake for 45-55 minutes until a toothpick comes out clean.
  6. For the toffee sauce, melt butter and brown sugar in a pot; add cream and vanilla until smooth.
