  • 1 ½ pounds red mini creamer potatoes
  • 4 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked or regular)
  • ½ teaspoon black pepper
  • Parsley flakes (for garnish)

Instructions

  1. Preheat your oven to 385°F (195°C).
  2. Line a baking sheet with parchment paper.
  3. Rinse the mini potatoes under cold water and set aside.
  4. In a bowl, mix cold water with 2 tablespoons of lemon juice. Carve skull faces into each potato using a paring knife and place in the lemon water mixture.
  5. In another bowl, combine olive oil, remaining lemon juice, salt, onion powder, garlic powder, paprika, and black pepper.
  6. Drain the carved potatoes and toss them in the seasoning mixture until coated evenly.
  7. Arrange on the prepared baking sheet with skull faces up and bake for about 30 minutes or until golden brown.
  8. Garnish with parsley flakes before serving.
