  • 2 tablespoons olive oil
  • 2 cups finely diced onion
  • 1 cup finely diced carrot
  • 1 cup finely diced celery
  • Salt and pepper
  • 1 tablespoon minced garlic
  • 1 tablespoon Italian seasoning
  • 11/2 teaspoons ground cumin
  • 1 teaspoon dried thyme
  • 1/8 teaspoon red pepper flakes
  • 11/2 cups green split peas (rinsed)
  • 2 small bay leaves (or 1 large)
  • 1 meaty chicken bone (or chicken hocks, plus more chicken if desired)
  • 8 cups reduced-sodium chicken broth
  • Fresh thyme leaves (optional)

Instructions

  1. In a heavy-bottomed pot, heat olive oil over medium heat. Add the onion, carrot, celery, salt, and pepper; cook until softened (5–8 minutes). Stir in garlic, Italian seasoning, cumin, thyme, and red pepper flakes.
  2. Add rinsed split peas along with chicken bones and chicken broth. Bring to a boil; then reduce heat to low and simmer uncovered for 60–90 minutes.
  3. Remove chicken bones; shred any meat and return it to the soup. Blend 2 cups of soup until smooth and stir back into the pot.
  4. Adjust seasoning if needed; serve hot with fresh thyme leaves on top.
