Ingredients

  • Jumbo pasta shells
  • Ricotta cheese
  • Shredded mozzarella cheese
  • Grated Parmesan cheese
  • Fresh spinach (or frozen)
  • Garlic
  • Marinara sauce
  • Olive oil
  • Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the jumbo pasta shells in boiling salted water until al dente (8–10 minutes). Drain and rinse under cold water.
  3. In a mixing bowl, combine ricotta, half of the mozzarella, grated Parmesan, egg, chopped spinach, minced garlic, Italian seasoning, salt, and pepper; mix well.
  4. Gently fill each shell with about 2 tablespoons of the filling and place seam-side up in a greased baking dish.
  5. Pour marinara sauce over the shells and sprinkle remaining mozzarella on top. Drizzle with olive oil.
  6. Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  7. Garnish with fresh basil if desired before serving.
