  • 1 chicken breast, cut into cubes
  • 1 tsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp chili powder or cayenne
  • Salt & pepper to taste
  • 1 cucumber, sliced
  • 56 cherry tomatoes, halved
  • 2 tbsp red onion, chopped
  • 1 tbsp chopped mint or parsley
  • Squeeze of lemon juice
  • 1 cup cooked white rice
  • 1 avocado, sliced
  • 1 tbsp spicy mayo (mayo + sriracha mix)
  • Optional: baby spinach or mixed greens

Instructions

  1. In a bowl, mix chicken cubes with olive oil, paprika, garlic powder, chili powder, salt, and pepper. Sear in a non-stick frying pan over medium heat for 5–6 minutes until cooked through.
  2. In a separate mixing bowl, combine sliced cucumber, halved cherry tomatoes, chopped red onion, herbs, lemon juice, salt, and pepper; toss well and chill.
  3. Assemble the bowl by layering cooked rice at the bottom. Add grilled chicken on top followed by avocado slices and cucumber salad. Drizzle with spicy mayo.
