  • 1/4 cup extra virgin olive oil
  • 1 diced onion
  • 1 bell pepper (diced)
  • 4 cloves garlic
  • 3 roma tomatoes (finely diced)
  • 1 teaspoon paprika
  • 1 pinch saffron threads
  • 4 boneless, skinless chicken thighs (cut into pieces)
  • 2 cups Spanish rice
  • 5 cups chicken broth
  • 1/2 lb jumbo shrimp (peeled)
  • 1/2 lb mussels (cleaned)
  • 8 oz calamari rings
  • 1/2 cup frozen peas

Instructions

  1. Heat olive oil in a large skillet or paella pan over medium heat. Sauté the diced onion, bell pepper, and garlic until the onion is translucent.
  2. Stir in chopped tomatoes, bay leaf, paprika, saffron threads, salt, and pepper. Cook for five minutes before adding white apple vinegar; simmer for another ten minutes.
  3. Add chicken pieces and rice to the mixture; cook for one minute before pouring in the chicken broth evenly around the rice.
  4. Bring to a boil, then reduce heat to medium-low. Avoid stirring; gently shake the pan once or twice while cooking.
  5. After about 15-18 minutes of uncovered cooking time, nestle shrimp, mussels, and calamari into the rice. Sprinkle peas on top and continue cooking without stirring for five more minutes.
  6. Remove from heat and cover to rest for ten minutes before serving.
  7. Garnish with fresh parsley and lemon slices before enjoying.
