  • ½ tsp cinnamon (for coating)
  • 8 oz cream cheese, softened
  • 4 tbsp unsalted butter, softened
  • ½ tsp vanilla extract (for frosting)
  • ¼ tsp salt (for frosting)
  • 2 ½ cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter and granulated sugar until fluffy. Mix in pumpkin puree, egg, and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, cinnamon, salt, ginger, and nutmeg.
  4. Gradually add dry ingredients to the wet mixture until combined. Refrigerate the dough for 30 minutes.
  5. Roll dough into balls and coat with a mixture of sugar and cinnamon before placing on baking sheets.
  6. Bake for 10-12 minutes until edges are lightly browned. Cool completely on wire racks.
  7. For frosting, blend cream cheese and butter until smooth; gradually add powdered sugar.
