  • 1 lb ground chicken
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1/3 cup red bell pepper (finely diced)
  • 2 tablespoons green onion (diced)
  • 2 teaspoons smoked paprika
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • 2 cloves garlic (minced)
  • Avocado oil for cooking
  • 4 slices cheddar cheese
  • 2 strips turkey bacon (cooked and cut in half making 4 pieces)
  • 2 buns (toasted)
  • Mayo and sriracha for topping

Instructions

  1. In a mixing bowl, combine ground chicken, egg, breadcrumbs, red bell pepper, green onion, smoked paprika, Cajun seasoning, salt, black pepper, and minced garlic. Mix gently until just combined.
  2. Divide the mixture into four equal portions and shape them into balls.
  3. Heat avocado oil in a skillet over medium heat. Add the chicken balls and smash them down flat with a spatula. Cook for 4-5 minutes until browned on one side.
  4. Flip the patties and add cheddar cheese on top of each one. Cover with a lid and cook for another 3-4 minutes until the cheese melts.
  5. Assemble your burgers by spreading mayo and sriracha on toasted buns. Place two patties topped with turkey bacon on each bun along with sliced red onions.
