  • 2 lbs beef chuck or stew meat
  • Salt and pepper, to taste
  • 1 tbsp vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp curry powder (or your favorite curry blend)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp chili flakes (optional for heat)
  • Coconut milk or broth, enough to cover meat

Instructions

  1. Chop the onion and mince the garlic and ginger. Cut the beef into bite-sized pieces.
  2. In a large pot, heat vegetable oil over medium-high heat. Season beef with salt and pepper and brown on all sides (5-7 minutes). Remove and set aside.
  3. In the same pot, sauté onions until translucent (3-4 minutes), then add garlic and ginger for another minute.
  4. Stir in curry powder, cumin, coriander, turmeric, and chili flakes (if using).
  5. Return the beef to the pot. Pour in enough coconut milk or broth to cover the meat. Bring to a gentle simmer then reduce heat to low.
  6. Cover and simmer for 1.5–2 hours until beef is fork-tender.
