  • 2 pounds potatoes, cut into 1 1/2 – 2 inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 2 pounds skinless, boneless chicken breasts
  • 1 cup creamy Parmesan garlic sauce
  • 1/2 cup water or chicken stock
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley, or to taste (optional)

Instructions

  1. In a slow cooker, combine potatoes, olive oil, salt, black pepper, and paprika. Stir until coated.
  2. Place chicken on top of the seasoned potatoes and sprinkle with remaining salt and pepper.
  3. In a mixing bowl, whisk together Parmesan garlic sauce and water/chicken stock. Pour over chicken and potatoes.
  4. Cover and cook on High for 4 hours or Low for 6 hours until chicken is cooked through.
  5. During the last 20 minutes of cooking, add mozzarella cheese.
  6. Garnish with chopped parsley before serving.
