  • 2 pounds baby red potatoes, halved
  • ¼ cup white apple vinegar
  • ¼ cup chicken stock
  • 2 shallots, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 3 cups broccoli florets
  • ½ cup heavy cream
  • 1 ½ tablespoons freshly squeezed lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Season the chicken thighs with smoked paprika, salt, and pepper.
  2. Sear the chicken in a skillet until golden brown on both sides.
  3. In the slow cooker, combine halved baby red potatoes, vinegar, chicken stock, chopped shallots, minced garlic, and dried thyme.
  4. Place the seared chicken over the potato mixture.
  5. Cover and cook on low for 5-6 hours or until the chicken reaches 165°F.
  6. Add broccoli 30 minutes before cooking ends.
  7. For the sauce: whisk together heavy cream, lemon juice, and cornstarch; stir into the slow cooker and cook on high for an additional 10-15 minutes until thickened.
