  • 3 pounds beef chuck (cut into 1 1/2-inch cubes)
  • 5 cloves garlic (minced)
  • 2-inch piece of ginger (minced)
  • 1 stalk lemongrass (cut into thirds and pounded)
  • 1 cup reduced-sodium chicken broth
  • ½ cup reduced-sodium soy sauce
  • ½ cup rice vinegar
  • ¼ cup hoisin sauce
  • ½ cup light brown sugar
  • Sriracha sauce to taste
  • 3 Tablespoons all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 3 Tablespoons vegetable oil (or grapeseed oil)
  • 3 stalks green onions (thinly sliced (green and light green parts))
  • 1 ½ teaspoon crushed red pepper flakes

Instructions

  1. In a small bowl, mix flour, salt, and pepper. Dredge beef in this mixture.
  2. Heat oil in a skillet over medium heat and brown the beef in batches; transfer to the slow cooker.
  3. Sauté garlic, ginger, green onions, lemongrass, and red pepper flakes in the same skillet until fragrant. Add chicken broth and scrape pan bits into the slow cooker.
  4. In a bowl, whisk together soy sauce, hoisin sauce, rice vinegar, brown sugar, and Sriracha; pour over beef.
  5. Cover and cook on high for 4–5 hours or low for 6–8 hours. Stir in green onions before serving.
