  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper, optional
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) full-fat coconut milk
  • 1 tbsp tomato paste
  • Salt and pepper, to taste

Instructions

  1. Prepare all ingredients by chopping the onion, mincing the garlic, and grating the ginger.
  2. In a skillet over medium heat, melt coconut oil and sauté onion until translucent. Add garlic and ginger; cook until fragrant.
  3. Transfer the mixture to a slow cooker. Add cubed beef, curry powder, turmeric, cumin, diced tomatoes, coconut milk, tomato paste, salt, and pepper.
  4. Cook on low for 6-8 hours or on high for 4 hours until the beef is tender.
