  • 2 lbs beef chuck, cut into cubes
  • 2 tbsp vegetable or coconut oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced (plus extra for naan)
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry paste (Madras or Indian blend)
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 beef stock cube
  • 1 can (14 oz) coconut milk
  • 2 tbsp tomato paste
  • Salt and freshly ground pepper, to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Prepare all ingredients by chopping onions, mincing garlic, grating ginger, and cubing beef.
  2. In a skillet over medium heat, add oil and sauté onions until translucent. Add garlic and ginger and cook until fragrant.
  3. Stir in curry paste and spices; cook for another minute.
  4. Transfer mixture to a slow cooker along with beef, coconut milk, tomato paste, salt, and pepper. Mix well.
  5. Cover and slow cook on low for 6-8 hours until beef is tender.
  6. For garlic naan: mix flour with water and minced garlic; roll out dough into flatbreads and cook on a hot skillet until golden.
  7. Serve the curry garnished with cilantro alongside warm garlic naan.
