  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 carrots, sliced into rounds
  • 2 celery stalks, sliced
  • 1 red bell pepper, chopped
  • 1 tablespoon tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1 cup dry apple vinegar
  • 1 cup beef stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large skillet over medium-high heat, add olive oil and sear the beef cubes until browned on all sides (about 4-5 minutes). Remove and set aside.
  3. In the same skillet, sauté onion and garlic until translucent (about 3 minutes). Add carrots, celery, and red bell pepper; cook for another 5 minutes until slightly softened.
  4. In an oven-safe casserole dish, combine seared beef cubes with sautéed vegetables. Stir in tomato paste, crushed tomatoes, apple vinegar, beef stock, oregano, and thyme.
  5. Cover with a lid or aluminum foil and bake for about 2.5 to 3 hours until the beef is tender.
