  • 1 cup snap peas
  • For the sauce: 3 tablespoons soy sauce, 1 tablespoon cornstarch, 1 tablespoon water

  1. Rinse shrimp under cold water; pat dry and season with salt and pepper.
  2. Prepare vegetables: trim asparagus, slice bell pepper, and rinse snap peas.
  3. In a small bowl, mix soy sauce, cornstarch, and water; whisk until smooth.
  4. Heat oil in a large skillet over medium-high heat; add garlic and ginger; stir-fry for 30 seconds.
  5. Add shrimp in a single layer; cook for about 2-3 minutes until pink; remove from pan.
  6. Stir-fry asparagus and bell pepper for 2-3 minutes; add snap peas and cook for another 2 minutes.
  7. Return shrimp to the pan; pour sauce over all ingredients; cook for an additional minute until thickened.
