  • 1 white onion, finely chopped
  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 box corn muffin mix (8.5 ounces)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and thoroughly drain it using a clean kitchen towel.
  3. In a large mixing bowl, combine the drained zucchini, chopped onion, half the cheddar cheese, corn, jalapeño, eggs, garlic powder, cumin, salt, and black pepper. Mix well.
  4. Gently fold in the corn muffin mix until just combined.
  5. Grease a 9×13 inch baking dish and pour in the mixture evenly.
  6. Top with the remaining cheddar cheese.
  7. Bake for about 50 minutes or until golden brown on top and set in the middle.
