  • 2 slices whole grain or sourdough bread
  • 2 soft-boiled eggs
  • 1 tbsp cream cheese or cashew spread
  • 2 slices fresh tomato
  • 45 cremini mushrooms, sliced
  • 1 cup fresh spinach
  • 1 tsp olive oil or butter
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil water in a medium saucepan. Gently add eggs and cook for about 7 minutes. Transfer to an ice bath to cool, then peel and slice in half.
  2. In a skillet, heat olive oil over medium heat. Sauté mushrooms until golden brown, then add spinach until just wilted.
  3. Spread cream cheese on one toast slice and layer with tomato slices; top the other slice with sautéed mushrooms.
  4. Plate both toast pieces alongside halved soft-boiled eggs and wilted spinach. Season and garnish with parsley.
