  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups spinach, fresh
  • 1 cup diced tomatoes

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix well.
  2. Shape the mixture into small meatballs (about 1 inch in diameter).
  3. Heat olive oil in a large pot over medium heat. Brown the meatballs in batches for about 5 minutes until golden brown; remove and set aside.
  4. Sauté chopped onions in the same pot until translucent (3-4 minutes).
  5. Add chicken broth; bring to a boil then reduce heat to simmer.
  6. Return meatballs to the pot and let them simmer in the broth for about 15 minutes.
  7. Stir in heavy cream and fresh spinach; cook until spinach wilts (about 2 minutes).
