  • 4 large egg yolks
  • 2 1/2 cups heavy whipping cream
  • 2/3 cup packed light brown sugar
  • 1/3 cup cornstarch
  • 1/2 tsp salt
  • 1/2 cup honey
  • 2 tsp vanilla extract
  • Flaky sea salt for topping

Instructions

  1. Prepare the pie crust in an 8-inch deep dish or a 9-inch pie pan and chill it in the fridge.
  2. In a medium saucepan, combine heavy whipping cream, brown sugar, cornstarch, and salt. Heat over medium while stirring until it reaches a rolling boil.
  3. Temper the egg yolks by gradually whisking in some hot cream mixture. Slowly mix back into the saucepan with remaining cream.
  4. Stir in honey and vanilla extract until combined.
  5. Pour the warm custard into the chilled pie crust and bake at 375°F (190°C) for 40-45 minutes until bubbly.
  6. Cool at room temperature before refrigerating until firm.
  7. Before serving, sprinkle with flaky sea salt.
