  • 22.5 pounds beef flank steak or roast
  • ¼ cup vegetable oil
  • Salt and pepper
  • 1 large onion, sliced
  • 45 cloves garlic, minced
  • 2 bell peppers, sliced
  • 2 tomatoes, sliced
  • 1 can (8 ounces) tomato sauce
  • 12 cups beef broth
  • Spices: cumin, smoked paprika, Sazon

Instructions

  1. Trim excess fat from the beef and season generously with salt, pepper, cumin, and Sazon.
  2. Heat vegetable oil in a skillet over medium heat and sear the beef on both sides until browned (3–4 minutes each side).
  3. In the same skillet, sauté onions, garlic, bell peppers, tomatoes, tomato sauce, thyme, smoked paprika, ground cumin for about 5 minutes until softened. Add broth and turn off heat.
  4. Transfer three-fourths of the vegetable mixture to the slow cooker; add the seared beef on top.
  5. Cover and cook on high for 3½–4 hours or low for 7–8 hours until tender enough to shred.
  6. Once cooked, combine shredded beef with remaining sauce in the skillet over low heat before serving.
