  • 1 whole or half bone-in turkey breast (or boneless)
  • ½ cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 ½ teaspoons fresh thyme, chopped
  • 1 ½ teaspoons fresh rosemary, chopped
  • ½ teaspoon fresh sage, chopped
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Thaw the turkey breast in the refrigerator if frozen. Remove it from the fridge 20 minutes before cooking.
  2. Preheat oven to 325°F (165°C).
  3. In a bowl, mix softened butter with garlic, salt, pepper, and chopped herbs until smooth.
  4. Pat the turkey dry and season with salt and pepper. Spread herb butter under the skin and over the surface.
  5. Roast in the center of the oven for 14–15 minutes per pound or until it reaches 165°F (74°C) internally.
  6. Let it rest for at least 15 minutes before carving.
