6 roma tomatoes
1 cup cherry tomatoes
1 medium yellow onion
1 head garlic
1/4 cup extra-virgin olive oil
1 cup vegetable broth
1/4 cup heavy cream
Fresh basil leaves
Baguette (for toasts)
Shredded gruyère cheese
Instructions
Preheat oven to 400°F.
Toss halved roma tomatoes, whole cherry tomatoes, chopped onion, halved garlic, olive oil, salt, and pepper on a baking sheet. Roast for 30-40 minutes until tender.
While roasting, slice baguette and top with olive oil and shredded gruyère. Bake until cheese is melted and crispy (about 15 minutes).
Blend the roasted vegetables with vegetable broth and basil until smooth. Stir in heavy cream.
