  • 500 g pumpkin (3 cups), diced
  • 2 garlic bulbs
  • 3 tbsp extra virgin olive oil
  • 1/2 cup white apple vinegar
  • 2 cups small pasta
  • 3 cups chicken or vegetable stock
  • 50 g grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Slice the top off each garlic bulb, exposing the cloves. Place garlic, diced pumpkin, and rosemary in an ovenproof dish, drizzle with olive oil, and season with salt and pepper. Roast for about 45 minutes until soft and caramelized.
  3. Transfer roasted ingredients to a pot, add chicken stock and white apple vinegar, and bring to a boil. Stir in small pasta and reduce heat. Cook for approximately 15 minutes until pasta is tender.
  4. Remove from heat, stir in grated parmesan until melted through, and serve immediately.
