  • 4 thick slices sourdough bread
  • Olive oil for brushing
  • Flaky sea salt
  • 2 burrata balls (room temperature)
  • 300g fresh dark cherries (pitted)
  • 2 tbsp aged balsamic vinegar
  • 2 tsp honey or maple syrup
  • Fresh thyme leaves (optional)

Instructions

  1. Preheat your oven to 200C (400F).
  2. In a baking dish, toss pitted cherries with balsamic vinegar and honey. Roast for 15-18 minutes until soft and syrupy.
  3. Brush sourdough slices with olive oil on both sides and toast in a cast iron skillet or broiler until golden brown. Sprinkle with flaky sea salt.
  4. Arrange warm toasted sourdough on plates, top each slice with half a burrata ball, and spoon roasted cherries over them.
  5. Drizzle extra balsamic if desired and garnish with fresh herbs before serving immediately.
